Wine and food pairings are an art form that enhances the dining experience by complementing the flavors of both the food and the wine. Here are some basic tips for successful pairings:

  1. Match the Weight & Intensity: Lighter wines pair well with lighter foods, and heavier wines complement richer, more robust dishes. For example, a delicate white wine like Pinot Grigio goes well with light fish dishes, while a full-bodied red like Cabernet Sauvignon pairs nicely with hearty red meat.

  2. Consider the Dominant Flavors: Identify the dominant flavors in the dish – sweet, sour, bitter, fatty, or spicy – and select a wine that either complements or contrasts those flavors. For example, a sweet Riesling can balance a spicy Thai curry, while a tart Sauvignon Blanc might complement a dish with green herbs.

  3. Acidity Matters: Wines with higher acidity can be refreshing when paired with fatty or rich foods. For instance, a crisp Chardonnay can cut through the richness of a creamy pasta dish.

  4. Tannins and Texture: Tannic wines, like many reds, can soften in the presence of protein-rich foods like steak or lamb. The tannins help to cleanse the palate of the fat, enhancing the flavors of both the wine and the food.

  5. Sweet with Sweet: Dessert wines should be as sweet as or sweeter than the dessert they are paired with. A luscious Sauternes, for example, pairs wonderfully with a sweet fruit dessert.

  6. Regional Pairings: Sometimes, the best guide is to pair wines with cuisines from their region. For instance, an Italian Chianti with a tomato-based pasta dish, or a Spanish Rioja with tapas.

  7. Experiment and Personal Preference: While these tips are guidelines, personal preference plays a significant role. Don’t be afraid to experiment and find combinations that personally delight your palate.

IN-PERSON COURSE & WORKSHOP REFUNDS & TRANSFERS

Cancellations of confirmed in-person course enrollments and workshops are accepted up to 60 days before the start of the course. An administration fee of $50 plus the full cost of the study materials and exam fees will be deducted, and the remainder of the course fee refunded to the payee. Separate WSET exam cancellation/transfer rules apply.
Transfers of a confirmed enrollment to another course are accepted 60 days before the course start date with an administration fee of $50.

Cancellations less than 60 days before the in-person course start date or course no shows forfeit any refund/transfer options unless students can provide medical documentation. If medical documentation is provided, students can be transferred to a later course. No refunds will be applied.

Course Transfers cannot be carried forward to the next academic year (which commenced on January 1).

Students are highly encouraged to purchase separate travel insurance.
