WSET Level 1 Award in Saké – Napa, California


One-day course 10 am to 4 pm

A beginner level introduction to sake for those starting a career in the industry or enthusiast pursuing an interest in saké.
For individuals new to the subject, this qualification offers a hands-on introduction to the world ofsaké. You’ll explore the main styles and types ofsaké through sight, smell and taste to develop an understanding of the key factors affecting flavors and aromas. Upon successful completion, you will receive a WSET certificate and lapel pin.

Toshio Ueno 酒匠 Master of Saké, SSI 日本酒学講師 Certified Saké Educator, SSI WSET Certified Saké Educator, Certified Master Saké & Shochu Sommelier, Jizake Educator. Born in Japan where his family has cultivated the Japanese wine grape Koshu for generations, Toshio grew up helping the business from a young age. Following his college education in the U.S. and employment at an international trading company in Tokyo, Toshio joined Chateraise, a pastry, and wine company as Director of Sales. There, he was put in charge of overseeing the personal wine collection of the company’s president, which intrigued him to enter the world of wine stewardship and research. Toshio joined Mutual Trading Company in 2002, where he currently holds the position of Manager.

The WSET Level 1 Award in Saké is intended for people who have little or no prior knowledge of saké. It is designed to provide a sound but simple introduction to saké. The qualification will assist those who need a basic familiarity with the main styles and categories of saké, for example, people who work with saké as part of a larger beverage portfolio, in the retail and hospitality sectors. Successful candidates will be able to list the principal categories of saké, and state their defining characteristics, and know the key principles involved in the storage and service of saké. They will consequently be in a position to answer customer queries and provide recommendations for the service of saké.

Learning Outcomes:

  • Learning Outcome 1 List and state the purpose of the main ingredients and the main production steps used to make saké.
  • Learning Outcome 2 Name the principal and some specialty categories of sake and state their key characteristics.
  • Learning Outcome 3 Know and recognize the processes and principles involved in the storage and service of saké.

Exam Format: The WSET Level 1 Award in Saké assessment is a closed-book examination 30 multiple-choice questions worth one mark each to be completed in 45 minutes. You must achieve a 70% to pass the exam and earn your certificate and pin.
